Cacao Fruit and Nut Biscuits

1 cup raw macadamia nuts
1/2 cup raw cashews
1/2 cup raw almonds
1/2 cup raw sunflower seeds
1 cup organic sultanas
1 cup flaked coconut
20 pitted and chopped dates
Seeds of a vanilla bean
1 tsp pure vanilla
1 cup raw cacao (or organic cocoa powder)
2 tbsp cold pressed coconut oil or nut oil
2 or 3 egg whites

1.  Process nuts and seeds until they are in crumb sized pieces.  Set aside.
2.  Process remaining ingredients until well mixed.  Add nuts/seeds.  This is really sticky.
3.  Place on baking paper in a sausage shape, roll up and leave in the fridge overnight.
4.  Cut cold, into slices about 4mm thick.
5.  Either dehydrate or place in a very low oven with the door open until the hardened.  Too high with the heat and the biscuits will be like biscotti on the outside and not ‘baked’ in the middle. 
Hide them.

Experiment with other nuts and seeds, and other dried fruit like figs.

Add ginger or orange peel or both for a zestier taste.
