Paleo Protein Power Cake
Need:
4 Jumbo Eggs
100g Almond meal
75g Hazelnut Meal
180g Pecan halves
2 Royal Gala Apples
Pure Maple Syrup
Do:
- Preheat oven to 190 C (Fan Forced)
- Grease and line a 20cm square slice/cake tray
- Whisk eggs in a bowl til yolks are broken and you have a smooth consistency (like you do when you drink them)
- Add the almond and hazelnut meal and a splash of Maple syrup and blend together
- Crush the pecans inside the packet and then stir through the cake mix
- Core and peel apples and then cut into smallish chunks then stir into mixture
- Pour/spoon mixture into tray and place into oven
Set timer for 30 minutes. When you hear it beep wait 3 or 4 minutes then get the cake out of the oven.
Test that it’s fully cooked by sliding a knife into the centre. If it comes out dry, you’re good to go.
Stand cake in tray for ten minutes then turn out and cool on wire rack. Stand guard so that hungry spouses and offspring don’t steal your wonderful creation.
